Harvest: Manual harvest in perforated crates at the beginning of October, consequently the phenolic maturation phase and climatic conditions.
Vinification: After soft crushing, it goes through a traditional alcoholic fermentation process, in stainless vats for 3 or 4 days until 7 % Vol Alcohol, cold filtration of the must and aging in stainless vats for 6 month.
Production: 1500 bottles/year
