Harvest: Manual harvest in perforated crates at the
beginning of October, consequently the phenolic maturation
phase and climatic conditions.
Vinification: the three varieties are vinified separately with a gentle pressing followed by the alcoholic fermentation of the classical type in stainless steel tanks at a controlled temperature not exceeding 30°C. After malolactic fermentation are assembled for the aging in stainless steel vats for 12 months and 4 months in bottle.
Production: 2000 bottles/year (production every 2 years)
